Creamy bacon & asparagus fettuccine

3 packs of fresh lasagne sheets, cut into ribbons

13-15 small asparagus spears, blanched and cut into 1cm pieces

1 pack of smoked bacon, cut into batons

handful of fresh parsley, chopped

3 eggs, beaten

5oz parmesan plus a little extra for sprinkling, finely grated

1tbsp vegetable oil

salt & pepper

Add the pasta to a pan of salted boiling water, over a high heat and leave to cook for 4-5 minutes.

In a separate frying pan over a medium heat, add the oil and bacon, fry for 3-4 minutes, add the asparagus for 1 minute just to warm through and set aside.

By this time the pasta should be cooked so drain but save a little of the cooking water in the pan (only half a cup).

Put the pasta back into the pan, add the bacon & asparagus mixture, eggs, parmesan and parsley, season with salt and pepper.

Give everything a huge stir while cooking for only 30 seconds to just cook the eggs a little and serve up with the extra parmesan sprinkled on top.

Spaghetti Carbonara with garlic bread 

Italian food is my favourite and a big yes in my family and this classic Italian will not disappoint you at all! Give this one a try. True carbonara shouldn’t have cream in it, saying that if you like it that way then all is good 😄 

6oz smoked bacon lardons

13oz dried spaghetti 

2tbsp veg oil

2 garlic cloves, minced

Handful of fresh parsley, chopped

3 eggs, beaten

2oz Parmesan cheese, finely grated, you can use the grated stuff you buy in the tubs

Salt and pepper
Put the spaghetti into a large pan of heavily salted boiling water and cook for 10 minutes or until cooked.

While that’s cooking, put the oil and smoked bacon lardons in a large pan over a medium heat and fry for 3-4 minutes, add the garlic and parsley, stir well and cook for a further 3-4 minutes and set aside. 

When the spaghetti is cooked, drain and pour into the pan with the bacon mixture (off the heat), add the eggs and the cheese, stir everything well to coat everything, the heat of the spaghetti will cook the eggs enough to give you a glossy sauce that coats the pasta.

Parmesan can be quite salty so I’d just season with pepper and a grating of Parmesan then serve.
The healthy garlic bread is easy and very tasty and you need is a tomato, baguette and a garlic clove.

While all that’s cooking, slice the baguette and toast it each side, slice the tomato and garlic in half and rub the surface with the tomato first and then the garlic.

Sausage and ricotta pasta bake

4tsp vegetable oil

half of a medium courgette, thinly sliced

4oz button mushrooms, thinly sliced

1lb sausages, cooked, cut into bite size chunks

12oz penne pasta, cooked

8oz ricotta

4oz cherry tomatoes, halved

1tbsp fresh thyme, chopped

8oz cheddar cheese, grated

Pre-heat oven to 220c (gas 7)

Heat the oil in a large frying pan over a medium to high heat, add the courgette and fry until they char a little and have softened.

Add the mushrooms, and fry these until soft, add the cooked sausage, pasta, ricotta, thyme and tomatoes, season with salt and pepper (beware ricotta is salty) stir well to combine everything.

Transfer to a oven-proof dish then top with the cheese, bake in the oven for 10-12 minutes until the cheese is melted and bubbling.

You can portion this off and freeze for another day.
